Tagine with Dried Fruits

Ingredients:

1 teaspoon salt
½ teaspoon black pepper
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon cinnamon
1-2 pounds boneless skinless chicken thighs (or breasts)
1 large yellow onion, thinly sliced
1 tablespoon minced garlic
1 tablespoon minced garlic
2 tablespoons minced lemon, rind only
3 medium carrots, peeled and cut into ½ inch pieces
1 tablespoon harissa paste (optional if you can’t find)
¼ cup dried apricots (can 2x if desired)
¼ cup pitted prunes (can 2x if desired)
1 ½ cups low-sodium chicken broth
¼ cup chopped cilantro (optional)
2 tablespoons chopped flat-leaf parsley
2 cups rice

Directions:

Spray the bottom of crockpot bowl with nonstick spray
Dice chicken into ½ inch cubes, add to crockpot
Slice onions and carrots, add to crockpot
Half or quarter apricots and prunes, add to crockpot
Mix all other ingredients in a bowl and add to crockpot
Cook on high for 3-4 hours or on low for 6-8 hours
Just before crockpot finishes cooking, cook rice
Serve over rice
