Cheeseburger

Ingredients:

1 ½ pounds ground beef (90/10)
1 package sliced cheddar cheese
Ketchup
Mustard
Hamburger dill chips (pickles)
Small whole wheat dinner rolls
3 sweet potatoes
1 summer squash
1 zucchini
Olive oil
Salt and pepper
Brown sugar
Butter
Other vegetables for grilling and burger fixings

Directions:

Wrap sweet potatoes in aluminum foil and grill for 50-60 minutes at 350 degrees depending on the size of the potato.

Make a small ball (bigger than a golf ball, smaller than a tennis ball) of ground beef in your hands.  Pat the ball with the palms of your hands into a flat patty ½ an inch in diameter.  Repeat until meat is gone and set aside.

Slice summer squash and zucchini crosswise into ¼ inch coasters.  Toss in a bowl with olive oil.  Lightly salt and pepper.  Wrap in aluminum foil or lay flat on a grilling tray.

Depending on the size of your grill and the timing of your meal, you can cook the potatoes first and set aside (they will stay warm in the aluminum foil) or cook the vegetables and burgers 30-40 minutes into grilling the sweet potatoes.

When burgers are cooked to your liking, assemble and enjoy.  Sweet potatoes are great on their own or can be doctored up with a little butter and brown sugar.
