1 Smithfield marinated pork loin
Sweet potatoes or red potatoes
Romaine lettuce
1 cucumber
1 container cherry tomatoes
1 red pepper
Baby carrots
Croutons
A1 steak sauce
Brown sugar
Butter
Salad dressing
Directions:
Cook marinated pork loin according to instructions on package (I prefer to grill it).
Wrap sweet potatoes in aluminum foil and cook on grill for 50-60 minutes depending on the size of the potato. Red potatoes will only take 30 minutes on the grill and even shorter if you slice them prior to grilling.
Chop lettuce, cucumber, cherry tomatoes, red pepper, and baby carrots. Toss into salad with croutons and use salad dressing of your choosing.
When pork loin is finished cooking move to wooden cutting board and slice. Enjoy with A1 steak sauce. The sweet potato can be eaten on its own or doctored up with butter and brown sugar.
