7 slices bacon (leave out if vegetarian desired)
2 cups chopped white onion
1 ½ cups chopped celery
2 cloves garlic, minced
2 teaspoons basil
3 cans of beef broth
3 cans of bean and bacon soup
3 cans water
Two 28-ounce cans diced tomatoes
1 ½ cups uncooked tortellini
1 teaspoon salt
3 cups shredded cabbage
2 cups cubed zucchini
Directions:
Brown bacon, remove and crumble
In bacon fat, cook onions, celery, garlic, and basil
Stir in soups, water, tomatoes, and salt
Simmer 30 minutes after bringing to boil
Add cabbage, zucchini, and noodles
Or, cook noodles separately and add at end
